Why is soup considered a winter food? Probably because it is hot and such a comfort on those cold winter days but I love soup in the summer! The garden is over flowing with fresh vegetables and what better way to use them up then to put them in a good hearty soup?
Need another reason to love soup? How easy is it to reheat and enjoy the next day? In my opinion, soup is always better the next day anyway! Am I right?
Now if you follow the Trim Healthy Mama eating plan this soup will fall into an E because of the carb count. I promise you it super easy to make and so tasty!
Southwest Chicken Soup
1/2 lb boneless skinless chicken breast cut into pieces
2 tsp olive oil
1 small red pepper, diced
1 medium onion, chopped
1 garlic clove, mince
2 cans (14.5 oz) chicken broth
1 can black beans, rinsed and drained
1 cup frozen corn
2 medium limes, juice squeezed out
1/4 tsp pepper
1 Tbsp chili powder
1 tsp ground cumin
1 tsp paprika
1 tsp oregano
2 green onions, sliced
In large skillet cook chicken until no longer pink. Remove and keep warm . In same pan, saute the red peppers and onion until tender. Add garlic; cook 1 minute longer. Add the broth, beans corn and lime juice. Then add seasonings. Bring to a boil. Reduce heat: cover and simmer 10 minutes. Add green onions and chicken, heat through.
I recently received this recipe binder from Heart of the Farm and I really like it for storing all of our recipes. Anyone else still hand write recipes? I still do! In our home if we really like a recipe after trying it then I write it down to keep.
One of my favorite things about this recipe holder is the note cards out to the sides. For instance this recipe didn't call for the extra seasonings originally but I found that it needed a little more flavor. So I was able to add that in the notes section. I also love that nothing gets splattered on the actual recipe card. With the card behind plastic it can easily be wiped off! I love sharing wonderful products with my readers and this is one worth sharing!
